Colcannon

Many singers have recorded the traditional song, "Colcannon", which is about a well-loved traditional Irish dish. Try this recipe and get acquainted with Irish traditions.

Serves 4 as a side dish
Preparation Time: 10 minutes
Cooking Time: 25 minutes

Ingredients:

  • 4 russet potatoes, peeled and cut into large chunks Salt
  • 5-6 tbsp unsalted butter (with more butter for serving)
  • 3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
  • 3 green onions (including the green onion greens), minced (about 1/2 cup)
  • 1 cup milk or cream

Instructions:

  1. 1. Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt, and bring to a boil. Boil until the potatoes are fork tender (15 to 20 minutes). Drain in a colander.
  2. 2. Return the pot to the stove and set over medium-high heat. Melt the butter in the pot and once it's hot, add the greens. Cook the greens for 3-4 minutes, or until they are wilted and have given off some of their water. Add the green onions and cook 1 minute more.
  3. 3. Pour in the milk or cream, mix well, and add the potatoes. Reduce the heat to medium. Use a fork or potato masher and mash the potatoes, mixing them up with the greens. Add salt to taste and serve hot, with a knob of butter in the center.

Irish Stew

There's meat, there are vegetables, and there's warm, thick broth - a dish that truly satisfies.

Serves 6
Preparation Time: 10 minutes
Cooking Time: 2 hours

Ingredients:

  • 2 tbsp vegetable or canola oil
  • 4 large onions, cut in wedges
  • 5 large carrots, cut in thick slices
  • 1 1/2 pound round steak
  • 6 large potatoes
  • 1 cup water
  • 2 tbsp flour (optional)
  • Salt and pepper to taste

Instructions:

  1. 1. Heat oil in large saucepan or skillet. Saute onions in oil. Add carrots and cook for a few minutes.
  2. 2. Cut steak into 1/4 to 1/2 inch cubes and add to onions & carrots.
  3. 3. Wash, peel and slice potatoes and add to pot.
  4. 4. Pour in water, season to taste with salt & pepper and bring to a boil.
  5. 5. Skim off any foam, reduce heat and simmmer over low heat until meat and vegetables are tender.
  6. 6. If desired, stew can be thickened by mixing 2 tablespoons flour with a little water and adding it to the stew.
  7. 7. Heat through until thickened and serve piping hot.

Potato Cake

Potato is an important food item in Ireland, being the country's savior in its long episode of famine. It's versatile that it can be cooked in so many ways, but the most popular Irish way of preparing it comes in the form of a cake, or boxty as they call it.

Serves 4
Preparation Time: 10 minutes
Cooking Time: 20 minutes

Ingredients:

  • 3 tbsp unsalted butter; divided into 2 tbsp and 1 tbsp
  • 575g waxy potatoes
  • 1 tsp salt
  • Freshly ground black pepper
  • Freshly grated nutmeg
  • 2 tbsp vegetable oil

Instructions:

  1. 1. Melt first portion of the butter in the microwave and set aside. Peel and grate the potatoes, season with salt, black pepper, and nutmeg. Put the oil and melted better and toss potatoes to evenly distribute oil, butter, and seasonings.
  2. 2. Over medium fire, heat a medium not-stick skillet. Drizzle a bit of the remaining butter on the skillet and add potato mixture. Make sure the potato is evenly spread on the skillet. Cook for about ten minutes or until the underside becomes golden brown.
  3. 3. Cook the other side by reducing the heat to medium-low and flipping the potato cake. Drizzle the last of the butter and cook for about ten minutes or until golden brown.
  4. 4. Enjoy immediately as potato cake is yummiest when served hot.

Original Irish Cream

What's a celebration without a good drink?

Serves 4
Preparation Time: 15 minutes

Ingredients:

  • 1 cup heavy cream
  • 1 14-ounce can sweetened condensed milk
  • 1 2/3 cups Irish whiskey
  • 1 teaspoon instant coffee granules
  • 2 tablespoons chocolate syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions:

  1. In a blender, combine heavy cream, sweetened condensed milk, Irish whiskey, instant coffee, chocolate syrup, vanilla extract, and almond extract. Blend on high for 20 to 30 seconds. Store in a tightly sealed container in the refrigerator. Shake well before serving.
