Not just for cowboys…..
I don’t know if I should call this a salsa or a dip. It’s a little of both I guess. Whatever you want to call it, all I know is this Cowboy Caviar has so much flavor bursting with each bite…it’s really hard to stop eating.
My favorite way to serve this Cowboy Caviar Recipe is with tortilla chips, but it also goes great with pita bread or veggies.
Use any leftovers as a salad topper or the filling for a sandwich wrap. Take a tortilla, fill it with some shredded chicken, cheese and Cowboy Caviar. Just like that, you have one of the best wraps ever!
Cowboy Caviar Recipe
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed or 1.5 cups of fresh corn
- 3 Roma tomatoes, diced
- 2 diced avocados
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped finely
- Juice of 1 lime
- 1/2 tsp salt
- 1/2 cup Italian dressing
- Place beans, corn, tomatoes, avocado, onion and cilantro into a large mixing bowl.
- Squeeze lime juice over the avocados so they don’t brown as quickly. Sprinkle on salt and pour in Italian dressing. Stir until well combined.
- Cover and chill in the refrigerator for an hour to marinate flavors together. This is best served the same day. The avocado might start to brown the following day, but still tastes great!

Ingredients

I made this to take to a cook out as an appetizer. Everybody loved it!!! We also put it on our hamburgers! There wasn’t any leftover.Will definitely be making this again. Super easy to make!

this is an awesome recipe!! I leave the avocado out and put them in individual containers for lunch….the day I take the container, I add the avocado.Reply

I made this yesterday for a family get together to celebrate my twins birthday. It was so easy to make. I made it a few hours in advance. Left the avocados out until I was ready to serve and added a second lime over the avocados, mixed it in and served. Everyone LOVED it. It was delicious. Fresh, light, and super tasty.
