My recipe for Instant Pot Cilantro Lime Rice is based on the famous Chipotle Rice, so if you love that you’ll really enjoy this recipe!

It’s a perfect side to serve with some of my other pressure cooker recipes including my Pressure Cooker Pulled Pork and my Pressure Cooker Chili Verde.

Tips for making easy Pressure Cooker Cilantro Lime Rice

Making rice in your instant pot or other pressure cooker is easy, so here are a few quick tips to keep you on the right track.

  • Use a 1 to 1 rice to water ratio in your pressure cooker and don’t soak your rice as this alters the cook time.
  • Always use fresh cilantro for this recipe, the dried stuff simply won’t cut it and is pretty tasteless
  • While you can use bottled lemon and lime juice for this in a pinch, it’s really best made with the freshly squeezed juice if at all possible
  • I keep the cooked rice in the fridge and reheat it in the microwave in a covered bowl, it takes less than a minute to warm up
  • I used basmati rice, but you could also use brown rice, however, you will need to adjust the cook time (see recipe card for details)

Ingredients

  • 2cupsjasmine rice
  • 2cupslow sodium chicken broth, gluten free, or use vegetable broth or water
  • 1tspsalt
  • 2bay leaves
  • 3tbspfinely chopped cilantro
  • 2tbsplime juice, freshly squeezed
  • 2tbsplemon juice, freshly squeezed
  • lime zest, from one lime

Instructions

INSTANT POT CILANTRO LIME RICE WITH JASMINE RICE

  1. Please read the recipe notes first.

  2. Add un-rinsed jasmine or basmati rice to your pressure cooker along with the chicken broth, salt, and bay leaves.

  3. Lock the lid, turn the steam vent to ‘sealing’ and using the ‘manual’ or ‘pressure cook’ button, adjust it to cook for 3 minutes at high pressure.

  4. When the cook time time is up allow the pressure to drop on its own (NPR – natural pressure release) until the pin has dropped, about 10-15 minutes.

  5. After you open the lid simply stir in the lemon and lime juices, lime zest, and chopped cilantro and stir well.

  6. Serve hot!

INSTANT POT CILANTRO LIME RICE WITH BROWN RICE

  1. To make this with brown rice simply follow the same ratio of rice to liquid (1:1) as before and do NOT soak the rice.

  2. Lock the lid, turn the steam vent to 'sealing' and using the 'manual' or 'pressure cook' button, adjust it to cook for 15 minutes at high pressure. (This will make slightly chewy brown rice, if you want it softer add a few more minutes cook time.)

  3. When the cook time time is up wait for 5 minutes, then use quick release to open the valve.

Recipe Notes

SALT

I used low sodium chicken broth to cook the rice with, if your broth is very salty you may want to omit or lower the added salt in the recipe

CHICKEN BROTH

We used a gluten free low sodium broth, you could also use vegetable broth or simply use water.

The flavor was spot on! The texture of the rice was Al dente which deterred my daughter from enjoying it. I thought it was fine Al dente and I halved the recipe since she and I are the only ones in the house that even enjoy rice. I made sheet pan chicken fajitas tonight and used the rice as the base for a bowl for myself. It was very good! Thanks!

Loved this recipe! I did rinse my rice, but used a medium grain which tends to be sticky (we like it sticky). Super easy and quick! This is my new go-to! Thanks

The ratio of brown rice to liquid needs to be 1 1/2 cup liquid per 1 cup of rice. I knew better but followed the directions anyway and got the burn notice on my instant pot. Had to start from scratch. And did my method of cookong brown rice on thebinstant pot. Rinse, saute wet rice for 3 minutes, add liquid and pressure cook 22 minutes with 10 min release. I did half water half no-chicken broth and omitted the salt. Otherwise kept it the same. Thanks for the recipe!

To double recipe, would the time to cook need to be adjusted? Haven’t used the instapot too much. Thanks.

    • Sheena Strain says

Hi Bonnie, no you don’t typically need to double the cook time for anything in the pressure cooker if you double the amount but there are one or two exceptions. However, just like cooking on the stove if you add more water/more food to the pot then it will take longer to heat up and come to pressure but the actual time it takes to cook at pressure is the same.

Delicious!! What is you used basmati brown rice? Would there be any difference from the white rice?

I have made it with white and brown rice. Brown rice will take longer to cook and you’ll find the timing for both in the recipe card.

FAQs

Why is my rice in Instant Pot too hard? ›

Why is the rice hard? If your Instant Pot rice is too hard or undercooked, you didn't cook it for long enough. Make sure you're using the right amount of cooking time followed by a natural pressure release.

Do Instapots cook rice well? ›

Nothing against the stovetop or the rice cooker, of course, but the convenience and reliable results of this Instant Pot rice recipe just can't be beat. It's super quick and easy, and the rice comes out tender, fluffy, and flavorful every time.

Why less water for rice in Instant Pot? ›

You might notice that this ratio of water to rice is lower than what you'd use if you were cooking the rice on the stove. That's because much less water evaporates from the Instant Pot, so you don't need as much to cook fluffy, tender rice. Once you add the water, it's time to cook!

What is the ratio of rice to water in an Instant Pot? ›

No matter what kind of rice I'm cooking, I use the same 1:1 ratio of rice to water or broth. This is probably less water than you're used to using for cooking stovetop rice, and that's because there's very little evaporation when you're using the pressure cooker.

Does cooking rice longer make it harder or softer? ›

Rice is Hard and Dry Because It's Overcooked

Just like how undercooked rice can burn to the bottom of the pan if it runs out of water, overcooked rice can also burn to the bottom of the pan when it's out of water, yet still cooking. Best case scenario, this results in hard, dried out rice.

Why not to pressure cook rice? ›

High pressure steam destroys the starch - protein network and makes rice stickier.

How much water for 2 cups of rice? ›

For tender grains of rice that easily separate, such as in a pilaf, use 2 cups of water for every 1 cup of rice. You can also use another liquid like stock in this 2:1 ratio. For slightly chewier, fluffy white rice, use 1 1/2 cups of water for every cup of rice, or a 1.5:1 ratio.

How many cups of rice for 4 people? ›

One (1) cup raw rice yields 3 ½ cups cooked rice, or enough for 3 light eaters. To be sure you have enough rice, prepare 1 ½ cups raw rice for 3 or 4 people and 2 cups raw rice for 4 to 6 people. Time required to cook a pot of rice? Plan on 30 minutes from the moment you turn on the heat to when the rice is cooked.

How much rice for 2 people? ›

Measure one cup of long grain white rice into a cup and level it off. One cup of dry rice will make enough cooked rice for two to three adult servings. (Or two adults and two small children.)

How much rice does one cup make? ›

As a general rule, 1 cup of uncooked rice will equal about 3 cups of cooked rice. Leftover rice can be used later in the week to make fried rice or chicken rice casserole.

Is rice and water a 2 to 1 ratio? ›

A 2-to-1 ratio, liquid to rice, produces soft, tender rice. Chewier rice will result from using a 1-to-1 ratio, or from adding a bit more water. I usually go with a 2-to-1 ratio for cooking a long-grain rice like basmati. Traditionally, basmati rice first is soaked for 30 minutes to as long as two hours.

Why is my instant rice hard? ›

If you don't add enough water, the rice ends up dry and crunchy.

Why is my rice cooker making hard rice? ›

Maybe you didn't add enough liquid to begin with. Whatever the case, if your rice is looking dried out, or the texture is still hard or crunchy when all the liquid has been absorbed, add up to ½ cup water and return to a simmer with the lid on. Be patient.

How do you fix rice that is too hard? ›

After cooking for the recommended period of time, if the rice is still hard or chewy, add a little bit of water to create more steam (for every cup of uncooked rice used, add about 2 tablespoons of water). Cover the pot tightly and place over very low heat for 5 to 10 minutes. Let rest before serving.

Why does my rice get hard after cooking? ›

The rice's starch cells collapse, squeezing out moisture and causing a realignment of starch molecules that results in the texture changing from soft and tender to hard and chewy. There's no way to prevent retrogradation, but it can be easily reversed by reheating the rice.
